– 2 cups of dry quinoa
– 1 can of organic diced tomatoes
– 2 cups of vegetable broth
– 1 red bell pepper, diced
– 1 onion, diced
– 2 cloves of garlic, minced
– 1 teaspoon of chili powder
– 1 teaspoon of ground cumin
– 1 teaspoon of paprika
– 1 teaspoon of sea salt
– 1/4 teaspoon of freshly ground black pepper
– 1/2 cup of frozen corn

1. Begin by rinsing the quinoa in a mesh sieve until the water runs clear.

2. Place the quinoa in a medium-sized pot with the vegetable broth and bring it to a boil over medium-high heat.

3. Once the quinoa is boiling, reduce the heat to low and cover the pot with a lid.

4. Let the quinoa cook for 15 minutes, or until all of the liquid has been absorbed.
