Savory Tomato Fish Recipe: A Seafood Delight!

This is my go-to fish recipe that is sure to bring a smile to anyone’s face! This seafood delight is the perfect mixture of flavor and texture. The fish is cooked to perfection in a savory tomato-based sauce, and is accompanied by a medley of vegetables.

To start, begin by heating a skillet over medium heat. Once hot, add a tablespoon of olive oil and let it heat for a few seconds. Next, add one pound of fish fillets to the skillet. Cook the fish for three minutes on each side, or until it is golden brown.

Once the fish is cooked, remove it from the skillet and set aside. In the same skillet, add one cup of diced onions, one cup of diced bell peppers, and one can of diced tomatoes. Sauté the vegetables until they are soft.

Then, add one tablespoon of garlic powder, one teaspoon of dried oregano, and one teaspoon of paprika to the skillet. Stir the mixture until all the spices are evenly distributed.

Add two cups of chicken broth to the skillet and bring the mixture to a boil. Once boiling, reduce the heat to a simmer and return the fish to the skillet. Simmer the fish and vegetables for 10 minutes.

Finally, remove the skillet from the heat and serve the fish and vegetables over steamed white rice. Enjoy!
