– 1 cup of long grain white rice
– 2 tablespoons olive oil
– 1 onion, chopped
– 2 cloves of garlic, minced
– 1 cup of diced bell pepper
– 1 cup of diced carrots
– 1 cup of diced celery
– 1 teaspoon of ground oregano
– 1 teaspoon of ground cumin
– 1/4 teaspoon of cayenne pepper
– 1/2 teaspoon of salt
– 1/2 teaspoon of black pepper
– 1 can of diced tomatoes, undrained
– 2 cups of chicken broth
– 1 pound of boneless, skinless chicken breasts, cut into 1-inch cubes
– 1/2 cup of frozen peas


1. Begin by cooking the rice according to package instructions.

2. In a large pot over medium heat, heat the olive oil. Add the onion, garlic, bell pepper, carrots, and celery. Saute for about 5 minutes, or until the vegetables are softened.

3. Add the oregano, cumin, cayenne pepper, salt, and black pepper. Stir to combine.

4. Add the diced tomatoes, chicken broth, and chicken to the pot. Bring to a boil and reduce to a simmer. Cook for 15 minutes, or until the chicken is cooked through.

5. Add the cooked rice and frozen peas. Stir to combine and cook for an additional 5 minutes, or until the peas are heated through.
