Ahh, my fish recipe — one of my all-time favorite seafood recipes! This dish is one of those recipes that manage to make me smile from the first bite. I have been making it for years and each time I do, it brings a little bit of cheer to my table.

The fish is always the star of the show, and for this recipe I like to use a nice, firm white fish like cod or haddock. I season it with a simple blend of salt, pepper, garlic powder, and a pinch of cayenne pepper for a bit of kick. Then I coat it with a combination of panko breadcrumbs and grated Parmesan cheese for a nice crunchy texture.

Once the fish is coated, it’s ready to be cooked. I like to bake it in the oven for about 20 minutes at 350 degrees Fahrenheit. When it’s done, the fish is golden and crispy on the outside and perfectly flaky on the inside.

I usually serve this with a side of roasted vegetables and some steamed rice. But no matter what accompaniments I choose, this dish always brings a great big smile to my face. Try it and see for yourself!
