– 2 tablespoons vegetable oil
– 1 large onion, chopped
– 2 cloves garlic, minced
– 1 teaspoon ginger paste
– 2 pounds boneless, skinless chicken thighs, cut into 1-inch cubes
– 2 tablespoons tomato paste
– 2 tablespoons garam masala
– 1 teaspoon cumin
– 1 teaspoon coriander
– 1/2 teaspoon turmeric
– 1/2 teaspoon chili powder
– 1 can (15 ounces) coconut milk
– 1/2 cup water
– 1/4 cup chopped fresh cilantro
– Salt and freshly ground black pepper, to taste


1. Heat the oil in a large skillet over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and ginger paste and cook for 1 minute.

2. Add the chicken and cook, stirring occasionally, until lightly browned, about 5 minutes. Add the tomato paste, garam masala, cumin, coriander, turmeric, and chili powder and stir to combine.

3. Add the coconut milk and water and bring to a simmer. Reduce the heat to low and simmer, stirring occasionally, until the chicken is cooked through, about 15 minutes.

4. Remove from the heat and stir in the cilantro. Season with salt and pepper, to taste. Serve over rice or with naan bread. Enjoy!
