To start, you’ll need to gather some fresh fish – it’s best to get a nice, white-fleshed fish like cod or sea bass. Cut your fish into two fillets and season with a little salt and pepper. Heat a generous amount of oil in a pan, and when it’s hot, add your fish fillets. Hold them in the heat for a few minutes to give them a nice golden crust; then flip them over and cook until the fish is cooked through.
To make the sauce, melt a knob of butter in a pan and add a few cloves of garlic, finely diced. Stir the garlic in the butter until it starts to brown, then add a good glug of white wine and let it bubble away.
