Ingredients:

-1 lb. boneless skinless chicken breasts

-1/4 cup olive oil

-1/4 cup freshly squeezed lemon juice

-2 cloves garlic, minced

-1 teaspoon dried oregano

-1 teaspoon dried basil

-1 teaspoon salt

-1/2 teaspoon ground black pepper

-1/2 cup sliced mushrooms

-1/2 cup diced bell peppers

-1/2 cup diced red onion

-1/2 cup cherry tomatoes

Instructions:

1. Preheat oven to 375°F.

2. Place chicken breasts in a baking dish.

3. In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, basil, salt and pepper.

4. Pour the mixture over the chicken and turn to coat.

5. Top with mushrooms, bell peppers, red onion and cherry tomatoes.

6. Bake for 25-30 minutes, or until chicken is cooked through.

7. Serve with a side of your favorite vegetables or a raw salad.
