Ingredients:
-1 lb of ground beef
-1 onion, chopped
-2 cloves of garlic, minced
-1 red bell pepper, chopped
-1 green bell pepper, chopped
-1 can of diced tomatoes
-1 can of black beans, drained and rinsed
-1 teaspoon of chili powder
-1 teaspoon of ground cumin
-1 teaspoon of oregano
-Salt and pepper, to taste
Directions:
1. Heat a large skillet over medium-high heat.
2. Add the ground beef to the skillet and cook until browned, stirring occasionally.
3. Add the onion, garlic, red bell pepper, and green bell pepper to the skillet. Cook until the vegetables are softened, about 5 minutes.
4. Stir in the diced tomatoes, black beans, chili powder, cumin, oregano, and salt and pepper. Simmer for 10 minutes.
5. Serve the beef and vegetable mixture over cooked rice or in warm tortillas.
