To begin, preheat your oven to 350 degrees. Grease and flour the bottom and sides of two 8-inch round cake pans. In a medium bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and 1/4 teaspoon of salt.
In the bowl of an electric mixer, cream together 1 cup of butter and 1 3/4 cups of sugar until light and fluffy. Add in 2 eggs, one at a time, and beat until well incorporated. Add in 2 teaspoons of pure vanilla extract and beat until combined.
Alternate adding in the dry ingredients and 1 cup of milk, beginning and ending with the dry ingredients. Beat until just combined.
Divide the cake batter between the two prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before turning them out onto a wire rack to cool completely.
Once the cakes have cooled, use a serrated knife to level off the tops of the cakes. Place one of the cakes on a cake stand or plate. Spread a thin layer of frosting over the top of the cake. Place the other cake on top and spread frosting over the top and sides of the cake.
