Ingredients:
* 2 tablespoons olive oil
* 1 onion, chopped
* 2 cloves garlic, minced
* 1 red bell pepper, diced
* 2 cups diced tomatoes
* 1 teaspoon dried oregano
* 1 teaspoon dried basil
* 1 teaspoon dried thyme
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 1/2 cup vegetable broth
* 1/2 cup cooked white beans
* 2 cups cooked brown rice
Instructions:
1. Heat the oil in a large skillet over medium heat.
2. Add the onion and garlic and cook, stirring occasionally, until the onion is softened and lightly browned, about 5 minutes.
3. Add the bell pepper and cook for an additional 2 minutes.
4. Add the tomatoes, oregano, basil, thyme, salt and pepper. Cook for an additional 5 minutes.
5. Add the vegetable broth and beans and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
6. Add the cooked brown rice and stir to combine.
