Ingredients:
• 2 tablespoons of olive oil
• 2 cloves of garlic, minced
• 1 red bell pepper, chopped
• 1 cup of cooked quinoa
• 1 can of black beans, rinsed and drained
• Half a teaspoon of ground cumin
• 2 tablespoons of lime juice
• Salt and pepper, to taste
• 2 tablespoons of chopped fresh cilantro
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the garlic and bell pepper, and sauté for 2 minutes.
3. Add the quinoa and beans, and stir until combined.
4. Sprinkle in the cumin, and cook for an additional 3 minutes.
5. Stir in the lime juice and season with salt and pepper.
6. Turn off the heat and stir in the cilantro.
7. Serve warm.
