– 2 cups of jasmine rice
– 2 tablespoons of olive oil
– 1 onion, diced
– 2 cloves of garlic, minced
– 1 teaspoon of ground cumin
– 1 teaspoon of dried oregano
– 1 teaspoon of smoked paprika
– 1 red bell pepper, diced
– 1 cup of frozen peas
– 1 can of black beans, drained and rinsed
– 1/4 cup of fresh cilantro, chopped
– Salt and pepper, to taste

Directions:

1. Heat olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook until softened, about 3-4 minutes.

2. Add the cumin, oregano, and paprika and cook for another minute.

3. Add the red bell pepper and cook for 2 minutes.

4. Add the frozen peas and black beans and cook until heated through, about 3-4 minutes.

5. Add the jasmine rice, reduce the heat to medium-low, and cook for 5-7 minutes, stirring regularly.

6. Add the cilantro and season with salt and pepper, to taste.
