Start by marinating your fish in a mixture of freshly-squeezed lemon juice, garlic, and salt. This will give the fish a fresh and zesty flavour.
Now for the fun part! Heat up a large skillet over medium-high heat and add a generous amount of olive oil. Once the oil is hot, add the fish and cook for 4-5 minutes. Flip the fish over and cook for an additional 4-5 minutes.
Remove the fish from the skillet and set aside. In the same skillet, add some butter and garlic. Sauté the garlic until it starts to turn golden brown. Now add the cooked fish back to the skillet and season with freshly-ground black pepper.
Add some white wine and let it simmer. Once the wine has reduced, add some cooked vegetables of your choice (I like to add asparagus and mushrooms). Cook for a few more minutes, stirring occasionally.
Garnish the fish with freshly chopped parsley and serve with a side of lemon wedges. Enjoy!
