To start, you’ll need one pound of fish fillets. We recommend any white fish such as cod, halibut, or haddock. Pat the fish dry with a paper towel and set aside.
Next, combine one cup of panko breadcrumbs, two tablespoons of olive oil, and one teaspoon of Italian seasoning in a shallow bowl. Mix the ingredients together until they are completely combined.
Dip the fish in the breadcrumb mixture, making sure to coat the fish evenly. Place the fish onto a baking sheet lined with parchment paper and bake in a preheated oven at 375 degrees for about 12 minutes or until the fish is cooked through.
While the fish is baking, prepare the topping. In a small bowl, combine one tablespoon of olive oil, two cloves of minced garlic, one teaspoon of Italian seasoning, and one teaspoon of lemon juice. Whisk together until everything is well blended.
Once the fish is done baking, top it with the garlic-lemon mixture. Place back in the oven for another two minutes, then remove and enjoy!
