This delightful fish recipe is one of my favorite seafood recipes. It’s an easy and delicious way to bring the taste of the sea to your dinner table.
To start, you’ll need some fresh, white-fleshed fish of your choice. I like to use tilapia, but cod, sea bass, or any other white-fleshed fish will work.
Next, you’ll need some fresh vegetables. My favorites are bell peppers, onions, and mushrooms. Slice the vegetables into thin slices and set aside.
In a separate bowl, mix together some olive oil, lemon juice, garlic, salt, and pepper. This will be your marinade.
Now, it’s time to put everything together. Place your fish in a baking dish or sheet pan and top it with the sliced vegetables. Pour the marinade over the fish and vegetables and place in the oven. Bake at 400 degrees for about 20 minutes, or until the fish is cooked through and the vegetables are tender.
When the fish and vegetables are done, remove from the oven and let cool for a few minutes. Serve over a bed of cooked rice or your favorite grain for a delicious, nutritious meal.
