Ingredients:
-1/2 cup of butter
-1/2 cup of all-purpose flour
-1/2 teaspoon of salt
-1/4 teaspoon of black pepper
-2 cups of chicken broth
-2 cups of cooked, diced chicken
-1/2 cup of frozen peas
-1/2 cup of diced carrots
-1/2 cup of diced onions
-2 tablespoons of chopped fresh parsley
-2 9-inch unbaked pie crusts
Instructions:
1. Preheat the oven to 425 degrees.
2. In a large saucepan over medium heat, melt the butter. Add the flour, salt, and pepper, and stir until combined.
3. Gradually add the chicken broth, stirring constantly until smooth and thickened.
4. Add the cooked chicken, peas, carrots, onions, and parsley, and stir until combined.
5. Place the bottom pie crust in a 9-inch pie pan. Pour the chicken mixture into the crust.
6. Place the top pie crust over the top of the mixture and crimp the edges to seal.
7. Cut a few slits in the top of the crust to allow steam to escape.
8. Bake for 40 minutes, or until the crust is golden brown.
9. Allow the pie to cool for 10 minutes before serving. Enjoy!
