Ingredients:
-1 ½ cup of all-purpose flour
-1 teaspoon of baking powder
-½ teaspoon of baking soda
-¼ teaspoon of salt
-1 cup of white sugar
-2 eggs
-2 tablespoons of vegetable oil
-1 teaspoon of vanilla extract
-1 cup of mashed ripe bananas
-½ cup of chopped walnuts (optional)
Instructions:
1. Preheat the oven to 350°F. Grease an 8-inch round baking pan with butter or cooking spray, and set aside.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
3. In a separate bowl, beat together the sugar, eggs, oil, and vanilla extract until light and fluffy.
4. Gradually add the dry ingredients to the wet ingredients, and mix until just combined.
5. Fold in the mashed bananas, and mix until just combined.
6. Pour the batter into the prepared baking pan, and sprinkle the chopped walnuts over the top.
7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
