– 2 cups vegetable broth
– 1 (15-ounce) can cannellini beans, drained and rinsed
– ¼ teaspoon ground black pepper
– 2 tablespoons chopped fresh parsley

Instructions:

1. Heat the olive oil in a large pot over medium heat.

2. Add the onion and garlic and cook until softened, about 5 minutes.

3. Add the carrots and bell pepper and cook until softened, about 5 minutes more.
