To start, get your ingredients ready: two fillets of fish, one red onion, two cloves of garlic, a handful of parsley, four tablespoons of olive oil, the juice of two lemons and a pinch of sea salt and black pepper.
Begin by preheating your oven to 200 degrees Celsius. Place your fish fillets on a baking tray, then thinly slice the red onion and garlic, and scatter them over the top of the fish.
In a bowl, mix together the olive oil, lemon juice, parsley, salt and pepper. Pour the mixture over the fish, making sure to cover it completely.
Bake the fish in the preheated oven for 15 minutes. Once cooked, serve the fish with a side of steamed greens, a sprinkle of lemon juice and a wedge of lemon.
