Ingredients:
– 2 tablespoons of olive oil
– 1 onion, chopped
– 2 cloves of garlic, minced
– 2 tablespoons of tomato paste
– 2 cups of vegetable broth
– 1 teaspoon of dried oregano
– 1/2 teaspoon of dried basil
– 1/4 teaspoon of red pepper flakes (optional)
– 1 can of diced tomatoes (14.5 ounces)
– 1 can of white beans (15 ounces)
– 1 bay leaf
– Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large saucepan over medium-high heat. Add the onion and garlic, stirring occasionally until softened, about 5 minutes.
2. Add the tomato paste and stir until combined, then add the vegetable broth, oregano, basil, red pepper flakes, tomatoes, beans, and bay leaf.
3. Bring to a boil, then reduce the heat to low and simmer for 15 minutes.
4. Remove the bay leaf and season with salt and pepper to taste.
5. Serve the stew over cooked pasta, rice, or quinoa. Enjoy!
