We start off by preparing a marinade for the fish. In a bowl, combine a tablespoon of olive oil, a tablespoon of balsamic vinegar, a teaspoon of dijon mustard, a teaspoon of garlic powder, and some freshly ground black pepper. Whisk the ingredients together until they are well combined.
Now it’s time to prepare the fish. Take a filet of your favorite white fish (such as cod, haddock, or flounder) and season with salt and pepper. Place the fish in the marinade and set aside for about 15 minutes.
Next, heat a large skillet over medium-high heat and add a tablespoon of olive oil. When the pan is hot, add the fish and cook for about 4 minutes per side, or until the fish is cooked through.
While the fish is cooking, prepare the sauce. In a small saucepan, heat a tablespoon of olive oil over medium heat. Add a minced garlic clove and a tablespoon of capers and cook for about a minute. Then add a half cup of white wine and bring to a boil. Reduce the heat and simmer for 5 minutes, or until the sauce has thickened.
When the fish is done cooking, transfer it to a plate and top with the sauce. Serve with your favorite side dish and a lemon wedge.
