Spaghetti Carbonara is a classic Italian dish that can be prepared quickly and easily with few ingredients. It is a simple combination of pasta, pancetta, Parmesan cheese, and egg, but the combination is surprisingly rich and delicious.
To make a traditional spaghetti carbonara, you will need the following ingredients: 8 ounces spaghetti, 2 tablespoons olive oil, 4 ounces of pancetta, 1 clove of garlic, 2 large eggs, and ½ cup grated Parmesan cheese.
First, cook the spaghetti in a large pot of boiling salted water according to the package instructions. Once the spaghetti is cooked al dente, reserve some of the pasta water. Then, in a large skillet, heat the olive oil over medium heat. Add the pancetta and garlic and cook until the pancetta is brown and crispy, about 5-7 minutes.
In a bowl, whisk together the eggs and Parmesan cheese. Once the pancetta is cooked, add the cooked spaghetti to the pan with the pancetta and garlic. Pour the egg and Parmesan mixture into the pan and toss to combine. Add a few tablespoons of the reserved pasta water to help create a creamy sauce. Cook for an additional 1-2 minutes to make sure the egg is cooked through.
Serve the spaghetti carbonara with additional Parmesan cheese and freshly chopped parsley. Enjoy!
