• 2 tablespoons of olive oil
• 1 onion, chopped

• 1 red bell pepper, diced
• 1 cup of cooked quinoa
• 1 teaspoon of ground cumin
• 2 tablespoons of paprika
• 2 tablespoons of tomato paste
• 2 cans of diced tomatoes
• 2 cups of vegetable broth
• 1 can of black beans, drained and rinsed
• 1 can of corn, drained
• Salt and pepper, to taste

Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion, garlic, and bell pepper and cook for about 5 minutes until softened.
3. Add the quinoa, cumin, paprika, and tomato paste and cook for an additional 2 minutes.
4. Add the tomatoes, vegetable broth, black beans, and corn.
