To make a delicious beef stew, start by seasoning one to two pounds of beef stew meat with salt and pepper. Heat a tablespoon of oil in a large pot over medium-high heat. Add the beef to the pot and cook until it is browned on all sides, about five minutes. Add one large diced onion, two cloves of minced garlic, and one teaspoon of dried thyme. Cook for two to three minutes until the vegetables begin to soften.

Next, add two cups of beef stock or broth to the pot, along with one teaspoon of Worcestershire sauce and one bay leaf. Bring the mixture to a boil, then reduce the heat to low and simmer for one to two hours, stirring occasionally.

When the beef is tender, stir in one large diced carrot, one diced celery stalk, one diced potato, and one tablespoon of tomato paste. Cook for 15 minutes until the vegetables are tender. Add one tablespoon of cornstarch mixed with two tablespoons of cold water to the pot and cook for an additional five minutes, stirring occasionally.

The beef stew is now ready to serve. Garnish with fresh chopped parsley and enjoy!
