– 1 can diced tomatoes
– 1/2 cup vegetable broth

2. Add the bell peppers, oregano, thyme, and basil and sauté for an additional 3-4 minutes.

3. Add the diced tomatoes, vegetable broth, salt, and pepper and bring to a boil. Reduce the heat and simmer for 10 minutes.

4. Add the quinoa and simmer for an additional 5 minutes.

5. Remove from heat and stir in the cheese and parsley. Serve hot.
